Bootleggers Gin Fizz

60ml Noble Bootleggers Australian Contemporary Gin

20ml Freshly squeezed lemon juice

15ml Pink grapefruit and vanilla syrup

1 x egg white / or equiv.

Soda (top up)

Add all ingredients (except for soda) into a shaker. Dry shake ingredients without ice. Add ice to the shaker and shake vigorously. Double strain into a chilled Collins glass. Slowly pour the soda down the side of the glass until the head of the cocktail rises like a souffle.

To make the pink grapefruit and vanilla syrup:

1 x cup caster sugar

125ml water

125ml Freshly squeezed pink grapefuit

Zest of 1 x pink grapefruit

1/2 vanilla bean or 1/2 tsp of vanilla bean paste

Combine sugar, water, pinkgrapefruit juice, zest and vanilla in a small saucepan, stirring to dissolve sugar. Bring to a boil and simmer for 5 minutes. Allow mixture to cool before straining through a siev into an airtight container. Syrup is good for up to three weeks in the fridge.
