At the Noble Bootleggers Distilling Co. we are all about creating exciting and innovative spirits and exploring new ground when it comes to flavour. Each gin is tailored from scratch to get the flavour we are trying to achieve. Our award winning gins feature a distinctive selection of botanicals and fresh local produce.

Australian Contemporary Gin

TASTING NOTES:

Earthy juniper, angelica root, vanilla, pepper and coriander over background citrus freshness. Creamy entry with soft juniper, herbal tea and citrus peel flavours lingering in a tangy, warming finish.

Best enjoyed - neat, or a splash of soda with fresh citrus.

Citrus Gin

TASTING NOTES:

Earthy juniper and spice with juicy citrus bursting through the palate. Navel and Seville oranges continue to develop in the background after the first sip. This gin is punchy in the citrus department and can stand up to any mixer you want to throw at it.

Best enjoyed - on ice with citrus, your favourite cocktail, or with a splash of soda or tonic.

Cherry Gin

TASTING NOTES:

Our ruby red gin offers distinctive aromas of glace cherry and dark chocolate alongside hints of Turkish Delight. Sweet yet fresh, it's medium bodied with juicy cherry tart and blackberry flavours accented through the finish.

Enjoy it neat, shaken up in your favourite cocktail, or as a G&T with a lemon twist.

Pink native Gin

TASTING NOTES:

Born from an experimental test batch that rose above the rest, The Pink Native Project is a bold expression of the Australian landscape – capturing the scent of the bush after rain with a profile that’s floral, wild, and exceptionally dry.

Distilled with native botanicals including juniper, riberries, coastal rosemary, scented emu bush, white kunzea, strawberry gum, and pepperleaf, it balances delicate bush florals with a crisp, clean finish.

Awarded Gold at the 2024 Australian Distilled Spirits Awards in the Contemporary Australian Dry category, this release also marks the debut of our Art Series gins – featuring a striking label by Bendigo-based artist Lauren Starr.

Best enjoyed - on ice with fresh lemon, French 75, or with a splash of soda or tonic.

Christmas Pudding Gin

TASTING NOTES:

With aromas redolent of fruit mince pie and traditional Christmas pudding, on the palate, the gin base keeps it fresh and balanced, finishing on a succulent note with juicy fruit cake and baking spice flavours.

Best enjoyed - on ice with fresh lime, with soda, or dry ginger with fresh citrus.

PASSIONFRUIT Gin

TASTING NOTES:

Bright, fresh, and unapologetically summery, this gin leads with classic juniper, zesty citrus, and soft vanilla, rounded out by a vibrant burst of tropical passionfruit. It's a lively, refreshing sip that screams sunshine and good times.

Best enjoyed as a Sour Cocktail, or with Mediterranean tonic and a twist of lemon.
