Amaro is a bittersweet herbal liqueur, traditionally enjoyed as an aperitif or digestif. At Noble Bootleggers, we craft Australian amaro that balances bold flavour with drinkability — designed to be enjoyed your way.
What Makes Our Amaro Different?
We take inspiration from traditional Italian styles, but our approach is distinctly our own.
Crafted in small batches in Longlea, just outside Bendigo, our amaro leans into bright, expressive flavours — layering citrus, spice, botanicals and subtle sweetness to create something balanced, versatile and uniquely Australian.
Rather than being overly bitter or heavy, our range is designed to be approachable — equally at home sipped neat, poured over ice, or mixed into a cocktail.

Terroso Amaro
The aroma offers subtle, refreshing earthy tones. Bittersweet on the palate, the Terroso Amaro is warming, accompanied with nuances of organic cola, vanilla and spice. The finish is zesty and crisp, leaving a gentle, lingering astringency.

Amarena Amaro
With juicy red fruit and spice aromas, the Amarena Amaro highlights cherries sourced from Blackwood Orchard in Harcourt, Victoria, for its vibrant flavour profile. Light and bright, very much like a Campari style, it offers a taste defined by fresh cherries, balancing sweetness with a hint of bitterness. The finish imparts a gentle, dry astringency that lingers on the palate.

Miss Amaro
Miss Amaro is a thoughtfully crafted aperitif that brings a touch of elegance and indulgence to the glass. Created by our daughter Olivia - whose love for all things pink and chocolatey inspired its creation - this unique amaro opens with delicate floral cacao aromas and glides into a smooth, chocolatey warmth on the palate.
