Noble Bootleggers is a small-batch distillery based in longlea, just outside of Bendigo, Victoria crafting bold Australian gin, amaro and bottled cocktails.

We’re a small, family-run distillery — fiercely independent and hands-on in everything we do.
What started as a shared passion for hospitality and flavour has evolved into a distillery grounded in creativity, curiosity and a desire to do things differently. Every bottle reflects that journey — from the way it’s made to how it’s enjoyed.

We’re not driven by tradition for tradition’s sake. Instead, we focus on balance, boldness and drinkability — crafting spirits that work just as well in a simple serve as they do in something more considered.
Regenerative Practices
Our approach extends beyond what’s in the glass.
We operate with a focus on regenerative and circular practices — returning organic waste to the land, integrating botanicals grown on-site, and continually looking for ways to minimise impact while enhancing flavour.
It’s an evolving process, but one that sits at the core of how we distil.

Working from Longlea, on the outskirts of Bendigo, we draw inspiration from the region — its produce, its landscape, and its growing reputation as a destination for food and drink.
Where possible, we incorporate locally sourced and seasonal ingredients, alongside botanicals grown and developed on-site.
